Easy and Delicious Matzah Granola

  • 3 cups whole wheat matzah farfel
  • 1½ cups halved almonds
  • 1½ cups halved pecans
  • ½ cup halved cashews
  • 7 tablespoons margarine
  • ½ cup dark brown sugar
  • ½ cup honey
  • 1¼ teaspoon kosher salt
  • 4 teaspoons ground cinnamon
  • ½ cup black raisins
  • ½ cup dried cranberries
  1. Preheat the oven to 325 degrees F. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, mix together matzah, almonds, pecans and cashews. Spread matzah mixture into a single layer on prepared baking sheet. Bake until toasted, about 15 minutes, tossing every 5 minutes.
  3. In a medium saucepan, place margarine, brown sugar, honey, salt, and cinnamon. Heat on
  4. medium-low heat. Stir until margarine is melted.
  5. Toss together the toasted matzah mixture and the margarine mixture in a large bowl. Return to the
  6. baking sheet and bake for 10 minutes longer, stirring frequently. Remove from oven and allow
  7. to cool.
  8. Once the granola has cooled, break it into small pieces and add the dried fruit. Store in an airtight container at room temperature for up to 2 weeks.
