Serves: Makes 15 hamantaschen
  • ¾ cup granulated sugar
  • 1 stick unsalted butter, at room temperature
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon orange zest
  • ¼ teaspoon kosher salt
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon orange juice
  • Purple food gel
  • Blue food gel
  • Green food gel
  • Strawberry jam
  1. Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  2. In a bowl of an electric mixer, cream the sugar and butter until pale and fluffy. Add in the egg, vanilla, zest, and salt. Mix until well combined. Then, add in the flour, baking powder, and juice. Mix until the dough forms.
  3. Take out three medium size pieces of dough. Leaving most of it in the mixing bowl.
  4. With your hands, color each medium size piece a different color. Form them into very small balls. Roll out the non-colored dough, and place the small colorful balls on top. Using your finger, press the balls down until flat. With a rolling pin, smooth out the dough. Then, using a round cookie cutter, cut circles out of the dough. Place the circles, color side down, on a baking sheet lined with parchment paper. Fill the centers with your favorite filling. Fold the sides up to form a hamantaschen and pinch closed.
  5. Bake for 6-8 minutes, or until lightly golden on the bottom.
  6. When the cookies are done, transfer them to a cooling rack to cool completely.
