Lemon Garlic Roasted Broccoli with Mozzarella

  • 2 large heads of broccoli
  • 4 garlic cloves, peeled and chopped
  • Olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 teaspoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 16 oz log fresh mozzarella cheese
  • ΒΌ cup pine nuts
  • 2 cups frozen peas, defrosted and room temperature
  1. Preheat the oven to 425 degrees F.
  2. Cut the broccoli florets from the stalks. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil.
  3. Sprinkle with the salt and pepper. Roast for 25 to 30 minutes, until crisp and tender and the tips of most of the florets are browned.
  4. Remove the broccoli from the oven and immediately toss with 1 tablespoon of olive oil, the lemon zest, lemon juice, mozzarella, pine nuts and peas.
  5. Serve warm and enjoy!
