
These Peanut Butter and Pomegranate Jelly Bars are the perfect dessert to whip up for guests.
These are a delicious take on a classic and are adored by adults and children. The combination of the sweet and fruity jelly with the salty and crunchy peanut butter is divine!

Ingredients
- 2 sticks unsalted margarine, room temperature
- 1½ cups granulated sugar
- 1 teaspoon vanilla bean paste, or pure vanilla extract
- 2 extra-large eggs
- 2 cups creamy peanut butter (18 ounces)
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1½ 18oz jars pomegranate jelly
- ⅓ cup old fashioned rolled oats
- 1 cup salted peanuts, chopped
- Pomegranate seeds for garnish, optional
Directions
- Preheat the oven to 350 degrees F.
- Generously grease a 9 x 13 x 2-inch baking pan. Set aside.
- In an electric mixer fitted with the paddle attachment, cream the margarine and sugar until light and fluffy. Add in the vanilla, eggs, and peanut butter and mix until well combined.
- In a separate bowl, sift together the flour, baking powder, and salt. Carefully add the flour mixture to the peanut butter mixture and mix until combined.
- Spread half of the dough in the prepared pan.
- In a small bowl, mix together the jelly to break up any large clumps. Add the jelly evenly over the dough.
- In a separate bowl, combine the remaining dough with the oats. Crumble this dough mixture evenly over the jelly.. Sprinkle the chopped peanuts on top and bake for 45 minutes, until golden brown. Cool, sprinkle with pomegranate seeds and serve.
